Citrus-Molasses Glazed Ham

Sweet-smoky molasses and bright citrus make this slowroasted showstopper the centerpiece your holiday table deserves.

1 (7- to 9-lb) fully cooked bone-in ham ½ cup grapefruit juice ½ cup orange juice ¼ cup molasses 3 Tbsp honey 1 Tbsp packed brown sugar 1 Tbsp Dijon mustard 3 tsp pepper

1. Preheat oven to 325°F. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with ¼-inchdeep cuts in a diamond pattern. Cover and bake 1¾ to 2¼ hours, until an instant-read thermometer inserted into the center of the ham reads 130°F.

2. In a large saucepan, combine grapefruit and orange juices while ham bakes. Bring to a boil; cook until liquid is reduced by half, 6 to 8 minutes. Stir in molasses, honey, brown sugar, mustard and pepper; return to a boil. Reduce heat and simmer, uncovered, until thickened, 12 to 15 minutes.

3. Remove ham from oven. Brush with 1/3 cup glaze. Bake, uncovered, basting occasionally with remaining glaze, until ham reaches 140°F, 15 to 20 minutes longer. Serves 12
