Mediterranean Cod Bake

Preheat oven to 400°F. In a large skillet, heat 1 tsp olive oil over medium, then add 1 small finely chopped onion, 2 cloves crushed garlic, 1 diced red bell pepper and 1 diced yellow bell pepper. Cook 2 minutes, stirring continuously. Add 1 (14-oz) can diced tomatoes, 2 Tbsp tomato paste and juice of ½ lemon; stir and cook 3 minutes. Season with ¼ tsp salt and ¼ tsp pepper, then stir in 2 Tbsp chopped fresh parsley. Pour sauce into a small baking dish. Place 2 cod fillets on top and scatter 8 pitted and chopped black olives on top. Bake 20 minutes, until fish is cooked through. Serves 2
