A Breakfast Tradition

The dough for these no-knead pastries rises overnight, leaving more time for making memories!

Christmas Morning Sweet Rolls

No eggnog on hand for the frosting? Use milk, half-andhalf or cream instead.

Rolls

1 (¼-oz) pkg active dry yeast 1 cup warm water (110°F to 115°F) ½ cup sugar 1 tsp salt 4 to 4½ cups all-purpose flour ¼ cup canola oil 1 large egg, room temperature

Filling

⅓ cup sugar 1½ tsp ground cinnamon ¼ tsp ground nutmeg 3 Tbsp butter, softened

Frosting

2½ cups powdered sugar 5 Tbsp butter, softened ½ tsp ground cinnamon ½ tsp vanilla extract 2 to 3 Tbsp eggnog

MAKE ROLLS

1. In a small bowl, dissolve yeast in water. In a large bowl, combine sugar, salt, 1 cup flour, oil, egg and the yeast mixture; beat on medium until smooth. Stir in enough remaining flour to form a soft dough, which will be sticky. 2. Do not knead. Place in a greased bowl, turning once to grease the top. Cover and refrigerate overnight.

FILL AND BAKE

1. Preheat oven to 350°F. In a small bowl, mix sugar, cinnamon and nutmeg. Punch down dough; turn onto a lightly floured surface. Roll into an 18 x 8-inch rectangle. Spread with butter to within ½ inch of edges; sprinkle with sugar mixture. Roll up, starting with a long side; pinch seam to seal. Cut into 12 slices. 2. Coat a 13 x 9-inch baking pan with butter or nonstick cooking spray. Place rolls in pan, cut side down. Cover with a clean kitchen towel; let rise in a warm place until doubled, about 45 minutes. 3. Bake 20 to 25 minutes, until golden brown. Place on a wire rack to cool slightly.

FROST

In a bowl, beat powdered sugar, butter, cinnamon, vanilla and enough eggnog to reach desired consistency; spread over warm rolls. Makes 12
